These vegetarian recipes are some of Allison’s favorites at home. They are protein filled to keep you full! 

Give them a try for a meatless Monday, or whenever you want to switch it up.

Recipes and Tips

Vegetarian Chili

Olive oil 

1 large onion, chopped 

2 – 3 garlic cloves 

1 tsp chili powder 

1 tbsp paprika 

1 tbsp ground cumin 

½ tsp oregano 

14 oz can of chopped tomatoes  

1 tbsp tomato paste 

2 14 oz cans of red kidney beans 

7 oz can of sweet corn 

3 oz frozen spinach 

  1. Heat olive oil in a large nonstick pan over medium heat. Add the onion and cook for about 4 minutes. Add the garlic, chili powder, paprika, oregano, and cumin. Cook for another minute. 
  2. Add the tomatoes, tomato paste, beans, and corn. Bring to a boil. 
  3. Reduce heat and simmer for 10 minutes, until sauce has thickened.  
  4. Stir in frozen spinach. Turn off heat and serve. 

Vegetarian Meatballs

Olive oil 

½ yellow onion, chopped 

2 tsp oregano 

1 tbsp fennel seeds 

1 tbsp garlic powder 

½ tsp crushed red pepper 

15 oz can of white cannellini beans, drained and rinsed 

½ cup whole grain bread crumbs 

Salt and pepper to taste 

  1. Preheat the oven to 350 degrees Fahrenheit. Prep a baking sheet.  
  2. Heat a skillet over medium heat and add the olive oil. Add the onions and cook for about 5 minutes. Add the oregano, fennel seeds, garlic, and crushed red pepper. Cook for about 1 minute longer.  
  3. In a food processor, add the onion mixture and the white beans. Pulse to combine. Add the bread crumbs and pulse again.  
  4. Form the balls with your hands and add them to the baking sheet. Cook for 15 minutes, flip, and cook for an additional 10 minutes or until golden brown.  
  5. Serve with your favorite whole wheat pasta and sauce or as a faux-meatball sub! 

Confetti Salad

2 cups cooked quinoa

1 cup diced mango (if frozen, thaw) 

1 cup corn (if frozen, thaw) 

1 large bell pepper 

1 red onion, chopped 

2 scallions, chopped 

1 large tomato, sliced 

½ cup pumpkin seeds 

¼ cup chopped cilantro 

Combine all the ingredients in a bowl and toss with your favorite dressing. Allison’s favorite is a homemade Avocado-Lime Dressing.  

Burrito Bowl

Build a burrito bowl based on your favorite ingredients here are just a few good additions: 

  • Brown rice
  • Black or pinto beans
  • Grilled onions and bell peppers
  • Corn
  • Salsa
  • Shredded cheese
  • Guacamole
  • Sweet corn

Samosa Burger

4 large waxy potatoes  

Olive oil 

1 large onion, chopped  

1 jalapeno, chopped 

1 tsp ginger 

2 garlic cloves 

2 tbsp garam masala 

1 tbsp cumin 

1 tsp coriander 

½ tsp turmeric 

1½ cups frozen peas 

Salt and pepper to taste 

  1. Preheat the oven to 425 degrees Fahrenheit. Prep a baking sheet. 
  2. Boil or steam the potatoes until fork-tender. 
  3. Add oil to a pan, and heat over medium heat. Add the onion, jalapeno and garlic. Cook for about 3 minutes. Add the rest of the seasonings and cook for another minute.  
  4. Place the potatoes in a large bowel. Using your hands or a potato masher, mash into bite-sized bits. Stir in the onion mixture, then gently fold in the peas.  
  5. Form the mixture into patties and place on the baking sheet.  
  6. Bake the burgers for 30 minutes.  
  7. Serve as a burger or over rice!
